Healthy Eating

2016 has begun and I don't feel particularly healthy, I'm always trying to lose or maintain my weight but I have just got to the point where I think "just eat healthy girl" so with this in mind I am attempting to do just that.

In 2014 I was diagnosed with an underactive thyroid, which partially explains why I find it hard to maintain a good weight for my height, age etc. Having hypothyroidism means taking medication to simulate the hormone that my thyroid should be producing and this means taking the medication for life. I don't like the sound of that - For Life. I'm always researching one thing or another, so researching how to combat hypothyroidism without medication seemed the logical thing to do.

The thyroid gland needs specific vitamins and minerals to properly do its job.

Iodine - Primary Sources: Sea vegetables: Kelp, nori, kombu, dulse, arame, wakame, hijiki
Seafood: Haddock, clams, salmon, shrimp, oysters, sardines
Iodized sea salt
Secondary sources: Eggs, spinach, garlic, asparagus, Swiss chard, mushrooms, summer squash, sesame seeds, lima beans
Selenium - Tuna, mushrooms, beef, sunflower seeds, Brazil nuts, organ meats, halibut, soybeans
Zinc - Beef, turkey, lamb, fresh oysters, sardines, soybeans, walnuts, sunflower seeds, Brazil nuts, pecans, almonds, split peas, ginger root, whole grains, maple syrup
Iron - Organ meats, oysters, clams, spinach, lentils, soybeans, white beans, pumpkin seeds, blackstrap molasses
Copper - Crabmeat, oysters, lobster, beef, nuts, sunflower seeds, beans (white beans, chickpeas, soybeans), shitake mushrooms, pearled barley, tomato paste, dark chocolate

As a point of interest, vitamins in some other foods:
Vitamin A (beta-carotene)

Broccoli, Brussels sprouts, cauliflower, greens (mustard, collard, kale, turnip), parsley, peppers (chili, Bell, sweet), strawberries, guava, papaya, citrus, kiwifruit

Peanuts, almonds, sunflower seeds, beans and soybeans, asparagus, leafy green vegetables, whole grains, liver

Some foods can disrupt the thyroid function so I shall try to avoid these foods.

Soy:  Isoflavones in soybeans can inhibit the enzyme which adds iodine to the thyroid hormone.

Examples of Brassica VegetablesRaw Brassica family of vegetables:  This group of vegetables includes brussel sprouts, cauliflower, broccoli, and cabbage, these foods; when eaten raw can reduce the thyroid hormone in a similar way to soy. Therefore these foods are best eaten cooked.

Gluten: There is a distinct connection between gluten intolerance, celiac disease, and autoimmune thyroid issues. This is the one food which is strongly recommend to avoid if you have a thyroid condition. Gluten is found in many foods, and can trigger a whole series of digestive issues and hormonal imbalances.



I decided the best solution for me was to eat as healthily as I can, so with that in mind, I also decide to cut gluten & dairy (as much as possible). I'm not a vegetarian or vegan however I am restricting meat & fish for the time being as well, and I make a point of eating  3 brazil nuts each day, so ... here goes.

I'm going to post some pics of meals I make.





A lovely looking Salad with Black Rice - Baby Spinach, Tomato, Cucumber, Yellow Pepper, Rocket, Avocado, Mayo.


This was my 1st time of having Black Rice, I bought it from Holland & Barratt. It was really quite nice, cooks the same as other rices I've had before.








Although some of these dishes look like desserts, I'm not having them as a dessert, they are my meal, whether it be breakfast, lunch or dinner.

 Purple Swag - 4 frozen bananas, 1/2 cup of raw coconut yogurt, frozen berries, acai powder, coconut water, mixed seeds. Blend all together - yummm!

There are so many combinations you can use to make these smoothies.

This dish is my favourite so far, 
It was delicious.  I've frozen the leftovers for another day - can't wait.











Maqui Berry Smoothie

Homemade Museli with blended Bananas, Maqui Berry Powder, Coconut Chips, Maca Powder & Coconut Water, topped off with more Banana and Museli.

I bought my Maqui Berry Powder from Amazon.co.uk 

Maca is rich in vitamin B vitamins, C, and E. It provides plenty of calcium, zinc, iron, magnesium, phosphorous and amino acids.

Before starting out on this healthy eating plan I had never had coconut yoghurt before. I've tried natural dairy yoghurt and have to say, I'm not keen, but ... this coconut yoghurt is fabulous, I can't get enough of it.

Carrot Cake Smoothie Bowl

3 frozen bananas
5 small carrots juice
2 small apples juiced
1 medjool date
1 tsp of ground cinnamon + extra for garnish1 tbsp raisins3/4 of juice pulp 

Method
Juice carrots & apples, collect pulp.
Get your pulp and mix it with the raisins. Remove any pips. Set aside.
Blend everything else except the extra cinnamon, until super smooth.
Pour in to a bowl, place the pulp mixture around the edges and some in the middle, sprinkle on the extra cinnamon and serve.
           Tastes delicious!

3 Bananas (2 Frozen) 
vanilla stevia
maple syrup
Museli
Cacao Drops
Maca Powder

Blend altogether

Have to say - this was rather tasty.





Huge crispy cold salad, Crispy potatoes slices, Guacamole

Salad: Lettuce, Rocket, Tomato, Cucumber, Red Onion, Red Pepper, Sunflower Seeds

Potato Slices - Parboiled, then baked in oven with a little coconut oil.

Home made Guacamole recipe
2 avocados
1 onion
1 tomato (skinned)
1 clove garlic
1 Lime juice

Blend all together







A grill-up - Grilled tomato & mushroom, Baked sweet potato, cucumber, spring onion & avocado

3/4 cup rice milk
2 Tsp acai berry powder

My GM Detox Week

I decided to try the Vegetarian GM Detox Diet for 7 days. I'm not a big meat eater, so decided to try the vegetarian plan rather the non-veggie one. I don't think I eat too badly, until the weekend arrives where I tend to treat myself with cakes & pastries. As a result of this my weight, over a week stays about the same, but that is not good when you want to shed a few pounds. Over the past year & a half, since I reached my goal weight whilst following the Dukan Diet, my weight had crept up about 10lbs so I was trying to lose those pounds to and then stay there. My aim was to do the detox for a week and then stick to a weight loss plan.

1. GM Diet – Day One:

Thursday 3rd April 2014 

Breakfast: Fruit Salad (Water melon, strawberry, black grapes, apple, kiwi)
Lunch: Fruit Salad
Dinner: Fruit Pizza (Water melon base, topped with strawberry, kiwi, black grapes)

The first day of the GM Diet preparation for the week you have mentally signed up for.
Day one is an all fruits day (with the exception of bananas). You can have as many varieties of fruit as you like, when you like and as much as you like – but NO BANANAS. Water intake should also be around 8-12 glasses a day.
So on day one I eat my weight in fruits (not literally but you get the point). I had oranges, kiwis, watermelon, cantaloupe, apples, pears, strawberries, and black grapes.

I drank plenty of water, I didn't measure it by the glass, but I tend to always have a 1litre bottle on water next to me and sip it all day long. I can't say I felt hungry at all and it was lovely tasting all the fruit. A relatively easy day.

2. GM Diet – Day Two:

Friday 4th April 2014

Breakfast: Bubble & Squeak (potato, cabbage, onion)
Lunch: Salad
Dinner: Vegetable stir-fry (peppers, carrot, onion, celery) & Bubble.

Day two is an all vegetables day. I could eat any vegetables, cooked and uncooked, of my liking. No oil was used whilst cooking the vegetables. Don't forget the 8-12 glasses of water throughout the day
I started my day having bubble & squeak, I cooked the cabbage & potato the night before, so I only had to cook the onion in the morning and mash it altogether. I didn't use any oil for cooking the bubble, but it did stick to the frying pan, so I tried laying it on a baking tray, in the end, and grilled it … voila lovely, with a bit of salt. Whilst the bubble was cooking, I decided to make some soup for lunch. I took the vegetables I wanted and juiced the lot of them and then put the liquid in a pan ready for heating later. As it turned out I didn't have soup for lunch, but it was saved for the next day.
I had a lovely refreshing salad for my lunch and for my dinner I made a stir-(dry)fry and used a bit more bubble & squeak made earlier as the accompaniment.
Yet again I was not hungry all day. So 2 days passsed and I felt good, not hungry and certainly not deprived.
I was expecting the fibre in the vegetables to have me rushing to the toilet again and again, but it just didn't happen. But my digestive system was being cleaned up. So all was good.


3. GM Diet – Day Three:

Saturday 5th April 2014

Breakfast: Fruit Salad (Water melon, strawberry, black grapes, apple, kiwi, pear)
Lunch: Vegetable Soup (Juiced, added any left over bubble & any left over stir-fry from day before) – butter-nut squash, parsnip, sweet potato, carrot, fennel
Dinner: Vegetable Curry, boiled (no rice), sauce made from left over soup & stir-fry. Vegeatbles sweet potato, potato, carrot, onion, parsnip etc



Day three of the GM diet plan is a fruit and vegetable day. Any quantity is allowed. No potatoes on this day and no bananas still. Same with the water – 8-12 glasses of water throughout the day.
When I read what I had to do for day 3, I obviously didn't read it properly because I did have potato and you're not supposed to – but what the heck, that's what I did.
Day 3 started with a refreshing fruit salad again – great way to start the day. My lunch was the soup I'd made the day before, but I had a bit of left over bubble & squeak and added that to the soup to give it a little bit of thickness. I have to say, it was a delicious soup.
The curry I made for the evening meal was all boiled up in a pan together with 4 teaspoons of medium curry powder added. I then added the left over soup to make the sauce. Delicious. I used to do this a lot when my kids were little to get them to eat vegetables … it worked!
I felt really good, the detox was working (but not excessively, if you know what I mean).

4. GM Diet – Day Four:

Sunday 6th April 2014

Breakfast: Banana Milkshake (2 cups skimmed milk, 2 bananas)
Lunch: 2 Bananas
Dinner: Vegetable Soup (added left over curry) – Butter-nut squash, sweet potato, celery, carrot, ginger.
Snack: Banana Milkshake

I had a sneaky peak at my weight this morning and was happy to see that I'd lost 3lbs.
The fourth day of the GM diet plan is mostly a bananas and milk day! I thought I'd find this day a tough one, but in actual fact it was relatively simple. You are supposed to have as many as 8-10 bananas and 3-4 glasses of milk throughout the day, and I'm really not a milk drinker at all – however banana milkshake sounded appealing.

I wasn't sure if I would feel hungry or not, but you don't know til you try. I started off blending 2 bananas and 2 cups of milk for breakfast. By mid-morning, I was starting to feel peckish, but was working so didn't do anything about it, but come lunch time I ate 2 more bananas.
For dinner I made some more of my veggie soup and added the left-over curry from the night before, to it. If I thought the last soup was delicious this one was amazing, Truly Scrumptious.
As a snack later in the evening I had another milkshake made up as before. I had 6 bananas throughout the day, I probably would had have more if I hadn't been working.

5. GM Diet – Day Five:

Monday 7th April 2014

Breakfast: Tomato Soup (Juiced tomatoes, added water, herbs)
Lunch: Tomato Soup
Dinner: Tomato Soup

On day five you can have one cup of rice for lunch and have to have six large tomatoes throughout the day, and water intake has to be increased to 15 glasses throughout the day.
I had a blip at reading again today as I totally forgot I could have rice.
I didn't like the thought of just eating tomatoes all day long (like fruit) so decided on soup again. I juiced up several tomatoes in the morning, added some water and herbs and heated it up in a pan. That was it my meals for the done done.
I had soup for breakfast, lunch & dinner and drank water throughout the day as I usually do.
I thought I'd feel hungry, and if I'm honest I did a bit, but again I was working all morning & part of the early afternoon, so there was nothing I could do about it anyway. Later in the evening I felt a bit of hunger but I was ready for bed then so, problem solved. Bed it was.



6. GM Diet – Day Six:

Tuesday 8th April 2014

Breakfast: Bubble & Squeak
Lunch: Bubble with stir-fry veg (cucumber, carrot, spring onion, onion, orange pepper, celery.
Dinner: Brown rice with veg curry.


I had another sneaky weigh-in this morning and I'd lost another 1lb. At this rate I might not need to go on a weight loss diet after the detox.
Day six you can have one cup of rice and all the vegetables we can eat throughout the day. Again the water intake was to be 8-12 glasses throughout the day.
I was definitely feeling the benefit of healthy eating.
I decided on bubble & squeak again for breakfast as it is quite filling and I knew I'd be working all morning. I made up enough for the day, should I choose to have it again, and as it happened I did. I made a stir-fry (I did use a little fry-light spray) and had some of the bubble as well. A good filling lunch ready for the afternoon work.
I didn't want to miss out on the rice today, so I made another curry and had it with the boiled brown rice for my dinner. I made the curry sauce from juiced pepper, sweet potatoes, carrot and mixed in any left over bubble to thicken it. I also drank the required amount of water throughout the day.

7. GM Diet – Day Seven:

Wednesday 9th April 2014

Breakfast: Peppered Mackerel
Lunch: Fruit salad (Watermelon, strawberry, kiwi)
Dinner: Vegetable curry (left over)



Yay!! This is the last day of the GM Detox Diet. I haven't found it difficult, but then I never do once I set my mind to doing something.
Day seven consists of one cup rice, all the vegetables we care to eat and any fruit juice.
I'm not a very observant person, so I really cannot tell you for sure if I look any different, especially if my skin looks radiant or not. I'm so happy that I managed to stick to the diet and complete it. My digestion is on track as you would expect after a detox.
Now as I'm following the vegetarian plan I didn't have any meat yesterday, however if you look at the two plans (below) you'll see they are almost identical, so I see no reason why you can't mix both plans. So this morning for breakfast I had peppered mackerel, now ok its not beef or chicken but it's still a good source of protein as well as essential fatty acids. It was lovely, however I did have to work straight after eating it and for the 1st time this week I felt quite queasy whilst working. Maybe it was the smell of the cooking lingering around for quite a while after, I don't know but I drank loads of water and felt a bit better so it might just have been a bit of dehydration.
I was going to juice up the fruit for my lunch, but from experience it tends to give me heartburn, so decided not to risk it. The queasiness disappeared during the morning which makes me think I was definitely dehydrated – which is very rare for me, but there is always a 1st time.
I didn't fancy brown rice for dinner, so just have the left over vegetable curry from the night before. Still delicious.



Well that is the end of my 7 day GM Detox Plan. Did I lose any weight? Well I shall check in the morning. Watch this space …..

Just out of interest, I got onto the scales to see how much weight I had lost during the course of the diet and it was just over 3lbs, which I am pleased with.
Hopefully I shall carry on eating a similar diet to that of the last week, with a few fancies along the way.



I downloaded the GM Diet Plan app for my phone, at the beginning of this detox and this is what it says (as you can see I didn't follow this suggested menu):

Vegetarian GM Plan

Day 1

Breakfast: 1 cup of diced apples and 1-2 glasses of water.
Snack: 1 bowl raw papaya and 1-2 glasses of water.
Lunch: 1 Bowl of watermelon or muskmelon and 1-2 glasses of water.
Snack: 1 orange/Sweet lime/Chico fruit and 2 glasses of water.
Dinner: 1 Bowl of melon and 2 glasses of water.

Day 2

Breakfast: 1 cup of boiled potato and 2 glasses of water.
Snack: 1 bowl of cabbage or red lettuce (raw) and 1-2 glasses of water.
Lunch: 1 Cucumber, 1 tomato and ½ a boiled beat and 2 glasses of water.
Snack: 2 tomatoes or 1 cup cherry tomatoes and 2 glasses of water.
Dinner: Boiled broccoli, cauliflower and asparagus with salt & spices and 2 glasses of water.

Day 3

Breakfast: 1 apple and 1-2 glasses of water or 1 cup of diced melon and 2 glasses of water.
Snack: 1 bowl of cantaloupe melon mixed with papaya and 2 glasses of water.
Lunch: 1 Bowl of mixed cucumber, lettuce and tomato with ½ boiled beat and 2 glasses of water.
Snack: 1 orange or ripe mango and 2 glasses of water.
Dinner: 1 Bowl of boiled broccoli, fresh greens and raw papaya and 2 glasses of water.

Day 4

Breakfast: 1 banana paired with a glass of warm milk
Snack: 1-2 bananas and milk combined in the form of cold milkshake
Lunch: 1 Bowl of fresh vegetable soup (tomato soup & cabbage stew)
Snack: 1 -2 bananas and milk combined in the form of a cold milkshake.
Dinner: 1 serving of vegetable soup and 1 glass of banana shake.

Day 5

Breakfast: 1 cup of sprouts with 1 bowl of tomato soup with 2-3 glasses of water.
Snack: 4-5 glasses of water.
Lunch: Soya chunks with tomatoes and 2-4 glasses of water.
Snack: 4-5 glasses of water.
Dinner: 1 Bowl of tomato soup and tomatoes and 2 glasses of water. Cottage cheese and soya chunks can also be had.

Day 6

Breakfast: 1 bowl of mixed vegetables (no tomatoes) soup with some sprouts and 1-2 glasses of water.
Snack: Greens with 2-3 glasses of water.
Lunch: Asian style mixed vegetables (no tomatoes) combined with soya chunks.
Snack: Sprouts with 2-3 glasses of water.
Dinner: 1 Bowl of vegetable soup with soya chunks

Day 7

Breakfast: 1 bowl of brown rice and 1-2 glasses of water.
Snack: Eat fruits, mainly berries (strawberry) and 10-12 glasses of water. Fruit juices can also be taken.
Lunch: A Bowl of brown rice combined with cooked vegetables (cabbage, broccoli and asparagus) followed up with a slice of melon or watermelon
Snack: Eat fruits, mainly berries (strawberry) and 10-12 glasses of water. Fruit juices can also be taken.
Dinner: 1 Bowl of greens and brown rice and 2-3 glasses of water.


Non-Vegetarian GM Plan

Day 1

Breakfast: 1 cup of diced apples and 1-2 glasses of water.
Snack: 1 bowl raw papaya and 1-2 glasses of water.
Lunch: 1 Bowl of watermelon or muskmelon and 1-2 glasses of water.
Snack: 1 orange/Sweet lime/Chico fruit and 2 glasses of water.
Dinner: 1 Bowl of melon and 2 glasses of water.

Day 2

Breakfast: 1 cup of boiled potato and 2 glasses of water.
Snack: 1 bowl of cabbage or red lettuce (raw) and 1-2 glasses of water.
Lunch: 1 Cucumber, 1 tomato and ½ a boiled beat and 2 glasses of water.
Snack: 2 tomatoes or 1 cup cherry tomatoes and 2 glasses of water.
Dinner: Boiled broccoli, cauliflower and asparagus with salt & spices and 2 glasses of water.

Day 3

Breakfast: 1 apple and 1-2 glasses of water or 1 cup of diced melon and 2 glasses of water.
Snack: 1 bowl of cantaloupe melon mixed with papaya and 2 glasses of water.

Breakfast: 1 bowl of mixed vegetables (no tomatoes) soup with some sprouts and 1-2 glasses of water.
Snack: Greens with 2-3 glasses of water.
Lunch: Asian style mixed vegetables (no tomatoes) combined with soya chunks.
Snack: Beef with 2-3 glasses of water.
Dinner: 1 Bowl of vegetable soup and a hamburger/chicken burger.

Day 7

Breakfast: 1 bowl of brown rice with a vegetable and 1-2 glasses of water.

My Diet - Week 26 Consolidation

Well folks this is the last week I am on the consolidation phase of the Dukan Diet. After this week I move on to the Stabilisation Phase, which basically is eat what you like (except have one pure protein day a week).

My weight has pretty much stabilised around 8 stone 7 pounds which is exactly where I wanted to be. My OH is still on the Cruise Phase but has not been strict with himself lately and so has not lost anything for a while, on the plus side he hasn't gained anything either. He still would like to lose another half a stone but thinks that will be enough weight loss for him (Dukan recomends he should lose another stone). I have to say he's done very well & looking so much better for it and to be honest I don't think he really needs to lose anymore weight, no matter what Dr. Dukan says, but I understand his need to lose another 7lbs so we'll keep plodding on with Cruise for a bit longer with him.

My typical 1 Pure Protein day a week has tended to be:

Breakfast: Oat Bran Pancake with natural yoghurt
Lunch: Bacon & Eggs
Dinner: Chicken Curry (no rice obviously)

I have been trying to have the PP day every Monday, as I can use up left over chicken from a Sunday roast, although some weeks I have changed the day (apparantly not recommended by Dr. Dukan, but what the heck!).

Now it's time to start living (well ... eating) normally again :)

My Diet - Consolidation Week 23

I have not put on any weight, in fact I am still losing it, but I am nearly at the end of the consolidation phase so hopefully once I am on the Stabilisation Phase of this diet, where I can eat anything I like (except one day a week which will be pure protein), the weight will stop dropping and, as the phase suggests, stabilise.

My weight is now 8st 5.75lbs and although it has gone lower than I wanted (8st 7lbs) it's not much lower & I do have my twins birthday to celebrate next week so I'm sure I'll put a few pounds back on.

I have encouraged a few more people to try this diet recently and so far they are having success.

I hope the blogging of my Dukan Diet has inspired some of you to give it a go.

My Diet - Consolidation, Weeks 17,18 & 19

I haven't blogged for a few weeks as I thought it may be getting boring for you all to read, however ...

My weight at the moment fluctuates between 8 stone 10lbs & 8 stone 8lbs, so I am very happy.

I have been having celebration meals, or party cake or just a few treats, if not a meal but the pure protein day a week definitely brings my weight back to where it should be straight away.
I have about 50 more days on the colsolidation phase still to go before I can totally relax with foods and so long as I have that pure protein day once every week I should be ok.

I can still not tollerate much oat bran, I have managed to eat it in a pancake & muffins, it really seems to be when I have it in porridge that I have the most problems.

My OH is still losing weight, although he would lose it a bit quicker if he'd cut out the alcohol.

My daughter has started on the Attack phase and lost 9lbs in her 1st week, and so far 4lbs this week so she's doing really well too.

Some people have tried this diet and given up after a couple of days because they felt rough, probably carbohydate withdrawal, but I have to say if you want to give this diet a go and you do feel a bit rough, don't give up just move to the Cruise phase so that you can introduce vegetables every other day. AND don't forget to drink 1.5 litres of water a day.

You can do it.

My Diet, Weeks15 & 16 - Consolidation Countdown

I didn't blog last week due to it being Christmas, but now the festive season is almost out of the way, let me tell you how I got on.

Last week (week 15), as you can imagine I had a few "Celebration Meals" Christmas Day being the worst for eating the wrong foods. However I tried not to go too mad. Christmas breakfast was 2 homemade chocolate chip cookies, dinner was a pate starter with 3 x small french toasts, the main meal was turkey, roast potatoes, sprouts, parsnip, stuffing, cranberry sauce, gravy & dessert was a chocolate cupcake, followed by a meringue roulade & later followed by a bit of chocolate log.

On Boxing Day I went to my sisters house for a buffet tea, but I deliberately ate my Dukan friendly shepherds pie before going and that pretty much did the trick. The only thing I ate at my sisters was a cherry bakewell & small chocolate mini roll.

On Thursday I had a protein only day and the rest of the week I mostly followed my Dukan consolidation plan.

All in all I don't think I did too bad.

Weight: 8st 12.5lbs (still under my goal weight of 8st 13lbs)

My OH has ok, but he does like his alcohol and that was too hard for him to resist over Christmas, however he had the same "P" only day as me and ended up this morning as the same weight as last Monday. Which considering he actually gained 1lb during the week, was pretty good. No loss but no gain.

Today being NYE will be tough, as it's usually the day I choose to do Protein only and so far I have but I know tonight things might change. I've cooked some sausage rolls which I will find tough to resist but I have got in a prawn platter as well which is protein, so my OH should be happy. Think the Pringles will be too much to resist, but once today & New Years Day are out of the way it will be full ahead with Dukan plan.

JFT96: He Aint Heavy ... He's My Brother

Please help raise the funds needed to continue the fight for justice. This is a cause very close to my heart and chokes me up whenever I think about what happened.



For over 23 years the bereaved families & fans have had to live with the lies broadcast around the world, that Liverpool fans were drunk, had charged the gates to get in, had arrived without tickets, were urinating on the dead, were pick-pocketing the dead. For 23 years some people (not all) have hated Liverpool fans for the things the media spouted that they'd done - THE TRUTH - so it said on the front page of a disgusting national newspaper. 

IT WAS ALL LIES

Liverpool fans have lived with abuse from others, whilst all they time they fought for the truth to come out, they fought for justice.

The truth has finally come out, the police lied to protect themselves, the media lied to sell papers, MP's lied to cover it up, police & paramedics were told to change their statements to shift any wrong-doings from themselves.



The fight for justice is almost over.
